Ingredients
- 1½ cups thick poha (flattened rice)
- 2 tablespoons peanuts
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 green chili, chopped
- 8 to 10 curry leaves
- 1/4 teaspoon turmeric
- Salt to taste
- 1 teaspoon sugar
- 1 tablespoon lemon juice
- 2 tablespoons chopped coriander
Step-by-step method
- Rinse the poha in a colander with water for 10 to 15 seconds. Let it sit for 5 minutes so it softens without turning mushy.
- Heat oil in a pan. Add peanuts and fry until crisp. Remove and keep aside.
- In the same pan, add mustard seeds, cumin seeds, curry leaves, and green chili. Once they splutter, add onion and cook until soft.
- Add turmeric, salt, and sugar. Mix in the softened poha gently so the grains stay separate.
- Turn off the heat. Add lemon juice, coriander, and fried peanuts. Serve warm.
